For two cups, you will need: 4 tablespoons flour 4 tablespoons powdered sugar 1/4 teaspoon baking powder pinch salt 1 tablespoon of liquid coconut oil (you can use melted butter or sunflower oil) 1 egg 3 T yogurt 1/2 tsps vanilla flavoring 1/4 tsp grated lemon rind 1 handful of fresh raspberries1 handful of fresh blueberriesFruit to decorate ~ 2-2 1/2 cups
Mix together flour, powder sugar, salt, baking powder. Set aside.
Beat eggs with yogurt and coconut oil. I do not even need to turn on the mixer, whisk is quite sufficient.
Slowly pour the liquid ingredients in the dry ingredients; mix well until well blended.
Wash fruit mixture; mix with a spoon of sugar crystals ~ the sugar “sticks” for berries. Divide fruit into 2 glasses; pour over the dough that you evenly divided into 2 glasses.
Cook in microwave at 850W for 2 minutes.When done, garnish cake with fresh fruit and sprinkle with powdered sugar. You can eat as soon as the little cool … but it’s nicer when left to stand 1-2 hours.
